If you want ruby-red stalks of sweet goodness, that hold their color when cooked, then look no further than the Canada Red Rhubarb (Rheum x 'Canada Red')! Any older home or farmhouse garden always had a large Rhubarb on the corner of the home or garden, these are incredibly hardy plants.

The enormous ruffled, heart-shaped leaves create a picturesque tiered mound, full of dark foliage and gorgeous red stalks. But it's the stalks that are the prize! Used as both vegetables and cooked into desserts throughout the late spring and summer. Rhubarb consistently grows new stalks right up until frost.

Lending an old-world flavor in pies, cobblers, preserves, sauces, and other baked goods. You can even eat the stalks fresh! Try them peeled and salted or mixed into summer salads for a refreshing, uniquely flavored crunch! Remember to discard the leaves because they are toxic. Planting and Application:

Harvesting can begin in early spring as soon as the stems grow about a foot long or more. Carefully pull out the largest individual stems, harvesting only about 1/3 of the total plant at once. Then let the plants grow to replace what was harvested. Harvesting can continue until early summer or when the temperatures get hot which can stress the plants. Stop harvesting in late summer also allows the plant to get stronger for next year.

The ornamental features of Canada Red (sometimes referred to as Canadian Red) go beyond their edible usefulness! The large, ornate, and ruffled leaves are a sturdy backdrop for other plants and a formidable foil for anchoring your garden beds. Your Rhubarb plant may send up flower stalks but these should be removed right down to the crown if they develop as you do not want the energy to go into flower production. Rhubarb plants are tough, cold-hardy plants that shrug off the northern cold. Plant in a full sun location that has good drainage, because the one thing that will do these plants in is soggy soil. Remove the entire flowering stalk as they develop to keep new stems and leaves regrowing. In the autumn, remove all foliage and stems when the plants turn yellow and are done growing for the season.
