Plant
beets in the spring about two weeks before the last frost, sowing them in
succession every two weeks until June. They
need to be sown about 2 inches apart in square foot blocks. It takes about two
weeks for them to sprout if the soil temperature is below 50ºF, or about one
week if the soil temperature is at 75ºF. At that time start thinning them out
to about one plant every 3-4 inches.
Beets
need steady moisture to avoid fibrous roots, and need to be kept mulched with
clean straw in order to retain the moisture. The Early Wonder Beet is excellent
for northern climates and southern climates where multiple crops are possible.
Early Wonder is an excellent container plant too. This vegetable beet has it all, tasty,
abundant greens, and a very flavorful beet.
When
beets reach the golf ball size they are the tastiest. Pull and store them when
there is a threat of frost. In mild winter areas, however, beets can be left
in the ground under about 8-10 inches of straw for storage
