Growing Zucchini

Going to grow zucchini? Prepare for prolific harvests that can feed a large family and several neighbors. Zucchini are famous for producing more squash than a family can use. Zucchini is a part of of the squash and pumpkin family. 2 or 3 hills of zucchini will usually more than feed your family and a few neighbors. Give the neighbors a zucchini recipe with the bounty from your garden and they may be waiting for you to go harvest these healthy fruits. Zucchini are low in calories and can be eaten raw, slightly steamed, with or without the skins. Zucchini have useful amounts of folic acid and potassium. Try them in stir fries, stews, and casseroles.

For successful growing, begin planting when the ground temperature reaches at least 65 degrees. Zucchini should be planted in a mound that is about 2 feet in diameter. Add well rotted manure to the dirt while building the mound. Space the mounds about 3 feet apart to allow room for the vines. Plant about 4 seeds per mound, spaced about 6 inches apart. Once the plants are growing, remove the smaller or weaker plants so there are no more than 2 plants per mound. Zucchini are fast growers. Do not let them get too large before picking. Pick the fruits when they measure 4 to 6 inches long. Once they have grown beyond 8 inches, their skin hardens and their flesh is full of seeds.

Try a fresh slice of zucchini dipped in plain yogurt with a little dab of fresh dill. Enjoy!
